Vegetarian dishes?

Hi all:

We'll be having a guest from San Francisco staying with us for a few weeks in June. I'm not sure (yet) whether she's vegan, but I know she's at least vegetarian.

Now, supposing that she's "just" vegetarian, and also knowing that Zurich doesn't really offer an affordable good selection of fresh fish (at least not what she'll be used to), and also taking into account that I work full-time and don't really want to spend more than 45 mins - 1 hr each evening cooking, I'm looking to find some really good vegetarian recipes which are tried and tested and foolproof

I've already got a good collection of stuff to do with aubergines and pasta in 100's of varieties - do any of you foodies have any other good ideas?

Pointless anyway as vegetarians by definition do not eat fish either. There are a small number of pescitarians (spelling? Is that a word anyway?) but quite rare in my experience.

You could try to find some vegetarian Indian or Thai recipes online.

Coop and Migros both sell pretty good Thai red and yellow curry pastes. Just mix a few tablespoons of the paste with coconut milk and throw some cut veggies in, simmer until the veggies are cooked and serve with rice.

Soften a whole load of chopped veg (any type, whatever you've got in) in a bit of olive oil in a pan. Throw in some herbs, chopped chilli and season with salt and pepper.

Make up some Ebly using a veg stock cube and allow to simmer for 20 mins (or whatever the pack says).

Once the veg is tender and the Ebly is done, combine the whole lot and serve in dishes with some crusty bread.

It's all done in less than half an hour.

Might even do for a vegan, you never know...

- There is also a very good vegetarian restaurant in the Langstrasse, near Limmatplatz (don't remember the name though)

One of our veggies friends likes this... very nice done on the bbq ( on a coolish bit , or wrap loosely in al-you-mini-ummmm foil ) while the rest of us are chewing on roasted beast flesh.

I would suggest something swiss and vegetarian, like alp macaroni. I find it very easy to make and it comes off quite authentic. The Betty Bossi cookbook has a very easy recipe for it.

Some ideias...

- White asparagus with sauce hollondaise and little new potatoes roasted in butter.

For the non-vegetarians you can serve up some ham.

Salad.

- Courgette Risotto

For the non-v. you can add some prawns, or a piece of saltimbocca.

Salad.

- Vegetable Polenta

If the above Swiss food is too heavy, then

- Tabouleh, turkish cabbage salad, eggplant mousse, houmus, bread.

For the non-v. you could serve up some prawns in garlic, chilli, parsley in olive oil.

Being a Veggie myself, here are some of the variations I try!

(other than the long cooking sessions on weekends)

1) Veggie Salads, mix fresh vegetables and tastes yummy with any salad sauce

2) Baguette bread with tomato mozzarella, I like the pesto spread in it/variations 😃ried tomatoes/pickled cucumber (also available at the take away)

3) Roesti

4) Tomato /spinach strudels (available at the take away)

5) Any "cheese" sandwhich

6) Boiled pasta with ''tomato" pasta sauce

7) Pizza base(buy it from coop or migros) add cheese/spread tomato sauce and other vegetables, bake like any other pizza

8) Spinach cooked with cheese , can be served with rice

You might have an issue with cheese as traditionally cheese is made with animal rennett and therefore not vegetarian. I think most Swiss veggies ignore this but you might find a US veggie more picky (in the UK much cheese is helpfully labelled as vegetarian, here it isn't so you don't know). Depends on your guest.

If you've got time there's all sorts of good stuff you can make with beans, tofu, lentils, etc. If you haven't got time look at the cornatur range in Migros or its equivalent in Co-op. Loads of stuff you simply fry, grill or bake.

Try this recipe: Crushed ice pressed kumquats generous spoon of brown sugar generous measure of gin top up with sparkling water Stir, add two short straws.

Serve five of these each and they'll be happy enough and you won't have to feed them anything more than peanuts. Cheers.

Yes it is, do you only eat cold dishes in June? How Swiss you are!

Frau mopp, easy to do it Asian style too.

Grab pakchoi or baby kailans from the Asian supermarkets here, fry it lightly with a bit of garlic, oyster sauce and add chinese mushrooms. I also have a steamed-egg recipe if she is not vegan.

For members of your family who are omnivores/carnivores, you can quickly stir fry beef and green peppers. Serve with jasmine rice.
