One for the peas fans

I was in the big Coop in BachenbĂŒlach today and bought a chunk of horseradish root. The store is almost identical to mega coops in GrĂŒze (Winterthur), Center 11 Oerlikon and Dietlikon, so I suspect you might find horseradish in one of these places.

Will you freeze it? I cut it in suitable sizes, throw them in a zipper bag and into the freezer.

Also check out Migros, you might get lucky. I got one (the only one in stock) in the local MM earlier this week. You’d probably have been lucky in the MMM Neuwiesen today.

AFAIK it’s better to keep them at around 0° (ideally a few degrees lower but who can do that).

It is indeed. Harvest (and delivery) is late autumn well into winter.

HA! Then I’ll be hunting for it. Stockpiling my freezer.

Have you tried freezing them mashed instead, and like chocolate bars pre-prepared for bits to be broken off?

Or do your chunks simply turn out better?

I bought just a small piece, but freezing it is a really good idea. I think I’ll grate it and freeze it like that.

I’m happy freezing them in chunks, then grate “freshly” when I use them. Works perfectly for me.

@Edot you could try that (and let me know how it worked out when you use it) but I would think it will lose in taste.

Although frozen stuff that is thawed often becomes mushy. For example, I chop jalapeños into tiny pieces and freeze in small bags that I either zip lock or bag in vacuum bags. They keep their heat. So I might try that first.

It does, yes. But I grate all these things while still frozen (an other reason to freeze them in handy portions). Don’t let them thaw and try to grate them then, that won’t work.
