yeast conversion

would anyone have first hand experience of how to convert measurments of dry yeast to grams of fresh compressed yeast (what they sell in migros, coop).

it's a matter of teaspoons/gram conversion + dry/fresh and i've found conflicting info online.

Can't help with the conversion but, I know the coop (at least) sells dry yeast. It is normally where the flour and baking ingredients are. It is called Trockenhefe. I don't know if you are looking for that or not.

To convert recipes to use dry yeast, use 40% of the weight of fresh yeast - in other words, use 20 gr. dry yeast in place of 50 gr. fresh yeast (.4 X 50 gr.).

To convert recipes to use fresh yeast, divide the weight of dry yeast by 40% - so, use 100 gr. fresh yeast in place of 40 gr. dry yeast (.4/40 gr.). One other important factor is the liquid. Dry yeast must be dissolved in 4 times its weight of water. That means, if you are replacing 40 gr. of dry yeast, then reduce the water in the recipe by 160 gr.
