I cannot speak to the Geneva Airport, but in Zurich it all depends on the day of the week and the time of day.
Middle of the week or early in the morning no problems. Leaving on a Friday or on the weekend at mid-day. You might need every minute of three hours.
Yes, but a Tuesday mid-day outside school holidays ... seems a bit much, really!
Saturdays and, to a lesser extent Sundays, are always chaotic at Geneva at this time of year, until just after Easter, because of UK skiers. If you're flying mid-week 3 hours sounds over the top. When you get to security, see if you can get into the lines using the new scanners at the extreme right where you don't need to empty your bags, though you do have to empty your pockets.

Luggage yes, but only carry-on.
Geneva airport is quite small. Back in the day it was proposed to build the airport at Nyon which would have allowed plenty of space to expand and been more accessible for people coming from other parts of Switzerland. Unfortunately this idea was rejected.
Its the usual thing. Do as they say or risk missing your flight at your own cost. I flew in Sept first time in 2 yrs and Zurich airport security queues were insane, it was a Monday at midday.
I would go 3 hrs early as instructed nowadays.
Son’s friend almost missed his flight last Thursday afternoon due to the insane amount of time it took to get through security at Geneva airport and he was there over two hours in advance.
I would go extra early just to be on the safe side.
I’d rather have time to waste at the airport than miss the flight.
For what it's worth, been in GVA airport a few times Dec.-Jan., and most things were working ok, longish lines but they moved. But I must say, if EasyJet, that section was always 2x more chaotic than the rest of the airport. Queue lines winding around the rest of the airport and a lot of arguing passengers and staff were being very strict. It if was another airline I'd take my chances, but EasyJet check-in and the like, no.
Not so easy going by public transport though, as if we go earlier to Yverdon for the train, we will hit the insane frontalier traffic!
If you only have on-board luggage and pre-printed boarding cards, you don't go to baggage drop but straight to security and check-in- yes. As said, not flown for years.

His was a late afternoon flight to Barcelona with easyJet and hand luggage.
The problem wasn’t check in but security, he sent T a photo of the queues. It took a ridiculous amount of time to get through apparently.
It’s not an easy situation that’s for sure.
When you arrive go straight to the Security. Avoiding the check-in queue should save you an hour or so. But don’t doddle. The landside (ie before security) shops and restaurants have nothing to offer at shocking prices. Once through security you can get shocked by the airside prices.
