I will be spending a week in Château-d'Œx and would love to be able to pronounce the name of the place properly. Is it like deux (my best guess), or like d'eau or even perhaps d'X ?
Château d'é is not far off the mark.
I personally hear and would say d'Œx=dè.
But like stephen_NE said, the è/é in final in French can be a bit different depending on the accent people have. Just don't pronounce the -x.

At least I was pretty sure that the terminal x is not pronounced, putting d'x as the last and least likely one.

I lived there one summer.... It is... Shatto Day!
So that's how it's pronounced! "Shatto day" I wonder about the pronunciation of some of these towns/cities everytime I pass them on the motorway.

I wouldn't beat yourself up about it. I called it Château Deux until I was corrected.
Homer would say:
Shat Oh, d'oh.
Why do they do this? Bex, Gex, d'Oex ??
They don't go home and say, "Dearest shall we have some Say tonight?
That would be 'oral'.
Interestingly I've often heard it, and Gex, Bex, etc. pronounced, by French speakers, as you would pronounce them, e.g. sex, in English. So I'm not sure there's a universal 'correct' way, but I think it may vary even among native speakers. Maybe between French and Swiss people?
Putting the phrase in Google translate and pressing the Speaker icon also comes up with "Shatto day" so it must be right.
Well, the last syllable doesn't have a diphthong as in "day," but since English has no way to represent that long monophthong phonem, "day" probably is the best way to spell it.

Yeah this is interesting. Our French friends told us they pronounce the 'x' as in Bex, Chexbres and the Swiss don't. As far as we know we have always called it Shatto Day. However you pronounce it -- it's beautiful. So enjoy!

But I would pronounce Chexbres as Shèber and not as Shééber or even as Sheksber
